Pepperonata Sweet And Sour Peppers On Bruschetta |

Delicious bruschetta recipe. Great for all those football parties and anything else also. Ingredients:
4 red bell peppers,seeded and small diced |
3 tbs evoo |
2 tsp salt |
2 tbs sugar |
1/4 c red wine vinegar |
1 large garlic clove,peeled |
1 loaf rustic crusty bread |
Directions:
1. Heat med. suzed saucepan over med. heat. Add oil,peppers and salt to pan. Allow to simmer with lid for 30 mins. ,stirring occasionally. 2. Remove lid,turrn heat to high. Add sugar and vinegar and cook another 5 mins,stirring often. Remove the peppers from heat;set aside. 3. Slice bread 1/2 thick and grill or toast. While the bread is still hot,gently rub the whole peeled garlic on 1 side. Top the same side with the pepperonataand it's juices and serve. |
