PEPPERMINT PATTY BROWNIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Rosenthal Estate in Montgomery, Alabama in 1989. Dated and source unknown. I made these and they are average, but that’s just my opinion, the people in my office inhaled them like there was no tomorrow and I am very critical of my cooking. Ingredients:
1-1/2 cups butter melted |
3 cups sugar |
1 tablespoon vanilla extract |
5 eggs |
2 cups all purpose flour |
1 cup cocoa |
1 teaspoon baking powder |
1 teaspoon salt |
24 small peppermint patties |
Directions:
1. Heat oven to 350 then grease rectangular baking pan. 2. In large bowl with spoon or wire whisk stir together butter, sugar and vanilla. 3. Add eggs and stir until well blended then stir in flour, cocoa, baking powder and salt. 4. Blend well. 5. Reserve 2 cups batter and set aside then spread remaining batter in prepared pan. 6. Arrange peppermint patties in single layer over batter then spread reserved batter over patties. 7. Bake 50 minutes then cool completely in pan or wire rack and cut into squares. |
