This is a family favorite I make at Christmas time. It gets me in the holiday spirit every time. This is the cookie I usually make for cookie exchanges as well. On a side note - to make these extra fancy - dip 1/2 of each cookie in melted chocolate. Ingredients:
3/4 cup butter, softened, no substitutes |
3/4 cup sugar |
1 egg yolk |
1 teaspoon vanilla |
2 cups flour |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
1/2 teaspoon peppermint extract |
1 cup miniature chocolate chip |
1/4 teaspoon red food coloring |
Directions:
1. In a mixing bowl, cream butter and sugar. 2. Beat in remaining ingredients except food coloring. if your food coloring comes in a dropper - do 4 drops. Mix just until the dough has red swirls - then STOP. 3. Drop by teaspoons onto ungreased cookie sheets. Flatten slightly. 4. Bake at 350 degrees for 12-14 minutes or until bottoms start to turn light brown. 5. Cool for 2 minutes before removing to wire racks. 6. If desired, dip half of each cookie in melted chocolate and place on waxed paper to dry. |
