This recipe was from a local Indianapolis newspaper more than 15 years ago. My mother and I have used it for cookie swaps with rave reviews. It's an excellent way to get rid of leftover Christmas candy canes! Ingredients:
1 cup margarine |
1 egg |
1 teaspoon baking soda |
2 cups quick oats |
1 cup brown sugar |
2 cups flour |
1/2 teaspoon salt |
1/2 cup peppermint candy, crushed |
1 1/2 cups powdered sugar |
3 tablespoons crushed peppermint candies |
Directions:
1. Sift together flour, salt & soda; set aside. 2. Beat together butter, and sugar until fluffy. 3. Blend in egg. 4. Add flour mixture& mix well. 5. Stir in mints and oats. 6. Drop onto ungreased cookie sheets. Bake 8-10 minutes at 350°F. 7. Mix icing ingredients. 8. Allow cookies to cool and then drizzle with icing. |
