7 of 10 of my Christmas candies. These were a special request from my mother-in-law, so I made it up for her. I love the pretty light pink color the candy gets from the candy canes.
Ingredients:
***cook time is chill time
1 - 12 oz. pkg. white chocolate chips
1/2 c. crushed candy canes, divided
1/2 - 1 tsp. peppermint extract, to taste
Directions:
1. Over low heat, melt chips in a saucepan, stirring constantly until smooth.
2. Mix in about 1/4 c. of the candy cane into the chocolate; stir in flavoring until desired 'mintiness'.
3. Spread mixture on a jelly roll pan (for easier clean-up, line sheet with waxed paper). Sprinkle remaining candy canes over the top and lightly press in.
4. Chill until set; break into small pieces. Store in an airtight container for up to three weeks.
