My aunt showed me this way to make zucchini that is easy, and family will eat. Ingredients:
4 tablespoons olive oil |
4 tablespoons water |
2 tablespoons balsamic vinegar |
2 tablespoons mccormick's montreal brand steak seasoning |
1 garlic clove (optional) |
1 -2 small zucchini |
1 -2 small summer squash |
1 small onion |
1 -2 bell pepper |
Directions:
1. Mix olive oil, water, vinegar, garlic (if using) and Seasoning in gallon sized zip-lock bag. 2. Cut vegetables into bite sized pieces and add to bag. 3. shake to coat all vegetables then let sit for 1/2 hour. 4. pan fry or grill over med-high heat until crispy-tender. |
