1 lb pork tenderloin, sliced |
1 cup beef broth |
1/2 cup dry white wine |
1 medium onion, chopped |
1/2 cup red bell pepper, chopped |
1 garlic clove, minced |
2 teaspoons finely crushed peppercorns |
1 tablespoon red wine vinegar |
1 tablespoon cornstarch |
2 tablespoons cold water |
salt and pepper |
1/4 cup minced chives or 1/4 cup parsley |
Directions:
1. Combine all ingredients except vinegar, cornstarch, water, salt, pepper and chives in a slow cooker. 2. Cook on high 3-4 hours. 3. Combine vinegar, cornstarch and water. Stir into stew. 4. Season to taste with salt and pepper. Serve sprinkled with chives. |
