Peppered Garlic Beef from Olive Magazine April10 Slimming World

Ingredients:
1 tablespoon black peppercorns
6 garlic cloves (large)
1 pinch salt
4 tablespoons red wine vinegar
600 g beef, skirt (trimmed)
Directions:
1. In a pestle and mortar crush the peppercorns, garlic and salt to make a smoothish paste, stir in the vinegar. Sit the beef in a non metallic dish and rub with paste. Leave in fridge for 2-3 hours.
2. Place a griddle pan on very high heat, rub the marinade OFF the meat and season again with salt. Cook meat until slightly charred about 5 min per side.
3. Transfer into the oven gas mark 7 fro 5 minutes, allow to rest for 5 minutes then crave and serve with salad and chips.
