These are great with soups, stews, chili..... Ingredients:
1 1/4 cups fresh or frozen corn, thawed |
1 cup finely chopped sweet red pepper |
1 cup finely chopped green onions |
1 1/4 cups all purpose flour |
2 teaspoons baking powder |
1 teaspoon ground cumin |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1 cup milk |
2 to 4 tablespoon vegetable oil |
Directions:
1. In a bowl, combine first 3 ingredients. 2. Combine flour, baking powder, cumin, salt and pepper; stir into corn mixture. 3. Gradually add milk, stirring until blended. 4. In a skillet over medium heat heat 2 tablespoons of oil. 5. Drop batter by 1/4 cupfuls into skillet. 6. Cook for 2 minutes on each side or until golden brown. 7. Repeat with remaining batter, adding more oil as needed |
