Peppered Cheddar Muffins

Serve these spicy muffins warm or at room temperature with butter or apple butter.
Ingredients:
2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 to 1 teaspoon coarsely ground pepper
1 cup (4 ounces) shredded sharp cheddar cheese
1 1/4 cups milk
1 large egg
2 tablespoons vegetable oil
Directions:
1. Stir together first 6 ingredients in a large bowl; make a well in center of mixture.
2. Stir together milk, egg, and vegetable oil until blended. Add to dry ingredients, stirring just until moistened. Spoon batter into greased muffin pans, filling two-thirds full.
3. Bake at 400° for 18 to 20 minutes or until tops are golden brown. Cool muffins in pans 2 minutes; remove from pans, and serve.
