From Cooking Light. Sort of an Indian recipe. Ingredients:
1 tablespoon vegetable oil |
1 cup chopped onion |
2 garlic cloves, minced |
1 cup chopped tomato |
1/4 teaspoon salt |
1/4-1/2 teaspoon black pepper |
1/4 teaspoon ground red pepper |
2 cups cauliflower florets |
Directions:
1. Heat oil in a medium nonstick skillet over medium-high heat. 2. Add onion and garlic; sauté for 5 minutes or until lightly browned. 3. Add the tomato, salt, and peppers; sauté 2 minutes. Add cauliflower. Cover, reduce heat, and simmer for 12 minutes or until tender. |
