peppery, cheesey and good Ingredients:
1 tbsp oil |
1/2 cup finely chopped sweet red pepper |
1/4 cup finely chopped onion |
2 tbsp finely chopped, seeded, jalapeno pepper |
1 1/4 cup flour |
1 cup cornmeal |
3 tbsp packed brown sugar |
2 1/2 tsp baking powder |
1 tsp black pepper |
1/4 cup shortenin |
1 1/4 cup milk |
1 egg |
1 cup shredded cheese (i use monterey jack) |
Directions:
1. heat oven to 400 degrees. grease muffin tins 2. heal oil in small skillet, add red pepper, onion and jalapeno. cook until vegetables are tender-about 8 minutes. 3. combine flour, meal, sugar, powder, pepper in bowl. with pastry blender cut in shortening until mixture resembles coarse crumbs. 4. beat milk and egg in small bowl until blended 5. stir milk mixture, begetables and cheese into flour mixture until blended. 6. spoon into muffin pan 7. bake for 15-20 minutes or until wooden toothpick comes back clean 8. these can also be baked in a loaf pan for 45 minutes |
