Pepper - Herb And Cheese Biscuits With Salba |

In an effort to finally kill the last of this season's parsley before the frost did, I whipped up these beauties... and they're healthier, more protein-packed and (IMHO) better than you-know-who's! Ingredients:
2 cups flour |
2 cups whole wheat flour |
2 tbsp salba seed (white chia seed) |
2 tsp garlic powder |
1 tsp cracked black pepper |
1 1/2 tbsp baking powder |
1 tsp baking soda |
1/2 cup vegetable shortening |
1 1/2 cups buttermilk |
2/3 cup minced fresh parsley |
1/2 cup finely shredded old cheddar cheese |
Directions:
1. Preheat oven to 425F. 2. Combine flours, Salba, garlic, pepper, baking powder and baking soda in a large bowl. 3. Cut in shortening until a coarse-meal texture forms. 4. Pour in buttermilk, parsley and cheese, and mix just until blended. 5. Pat out on a floured board and cut into rounds. 6. Place on ungreased sheets. 7. Bake 12 minutes, rotating pans halfway through baking time. 8. Remove immediately to wire rack. |
