Pepper Crusted Tuna With Horseradish Tequila Cream |

This is staright from Chilli Peppers in Kill Devil Hills on the outer banks of North Carolina. Ingredients:
4 -6 lbs tuna, loin |
1 teaspoon crushed chipotle pepper |
1 1/2 teaspoons salt |
1 tablespoon cracked peppercorn |
1 tablespoon thyme |
1/2 cup prepared horseradish |
1/2 cup heavy cream |
1/2 cup sour cream |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 fluid ounce tequila |
Directions:
1. Mix the chipotle pepper,salt,pepper corns and thyme together well. Roll the tuna loin in the mixture so it is well coated and sear on a flat grittle or large frying on medium heat about 5 minutes each side. 2. Pour the Horseradish Tequila Cream over the tuna, slice thin to serve as a appentiser. Serve Hot! |
