Pepper Crusted Tuna With Horseradish Tequila Cream

This is staright from Chilli Peppers in Kill Devil Hills on the outer banks of North Carolina.
Ingredients:
4 -6 lbs tuna, loin
1 teaspoon crushed chipotle pepper
1 1/2 teaspoons salt
1 tablespoon cracked peppercorn
1 tablespoon thyme
1/2 cup prepared horseradish
1/2 cup heavy cream
1/2 cup sour cream
1/2 teaspoon salt
1/2 teaspoon pepper
1 fluid ounce tequila
Directions:
1. Mix the chipotle pepper,salt,pepper corns and thyme together well. Roll the tuna loin in the mixture so it is well coated and sear on a flat grittle or large frying on medium heat about 5 minutes each side.
2. Pour the Horseradish Tequila Cream over the tuna, slice thin to serve as a appentiser. Serve Hot!
