this spicy crab bisque is a great warm soup for those cold long winter days. Used ib several restaurants I worked in sold great Ingredients:
1 c ea. diced red and green peppers |
1c diced onions |
6 oz butter |
1 c flour |
2 lbs lump crab meat, cleaned |
1qt heavy cream |
3 qts. seafood stock |
1 tblsp cayenne pepper |
1 tblsp white pepper |
2 tblsp paprika |
4 oz. tomato sauce |
Directions:
1. Saute Peppers and onions in 2oz of butter until soft 2. add cream and stock to a large stock pot 3. add onions,peppers cayenne, white pepper and paprika 4. stir 5. add tomato sauce cook over med. heat stirring often as not to scorch 6. add crab meat 7. when just to the boinling point melt remaing butter in a pan and add flout to make a roux cook until lightly golden and nutty tasting 8. add with whisk to soup 9. whisking briskly to remove any lumps until soup has thickened turn heat to low and cook for 30 minutes stirring occasionally |
