This is a very nice and refreshing salad that has so many good flavors going on and goes well with everything. Enjoy
Ingredients:
2 medium red onions chopped
2 red bell peppers cut into bite size pieces
2 green bell peppers cut into bite size pieces
2 yellow bell peppers cut into bite size pieces
2 mild green chilies sliced
7 cloves garlic chopped
6 tablespoons extra virgin olive oil
1/4 teaspoon curry powder
1/4 teaspoon turmeric
1/4 teaspoon dried ginger
1/8 teaspoon ground cardamom
1/2 teaspoon cumin
1-1/4 pounds tomatoes diced
1/4 teaspoon granulated sugar
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
1 medium bottle green pimiento stuffed olives drained
6 tablespoons fresh chopped cilantro
juice of 1/2 lemon
Directions:
1. Lightly sauté onions, peppers, chilies and garlic in olive oil 15 minutes stirring occasionally.
2. Sprinkle in curry powder and other spices then stir and cook a few minutes to draw out flavors.
3. Add tomatoes and continue to cook until thickened.
4. Season with sugar, salt and pepper then stir in olives and cilantro.
5. Pour lemon juice over and stir gently then chill until ready to serve.
