Pepper and Mozzarella Pasta |

Quick and tasty. Ingredients:
2 tablespoons olive oil |
1 orange bell pepper, deseeded and cut into strips |
1 red pepper, deseeded and cut into strips |
1 onion, finely chopped |
2 garlic cloves, crushed |
14 ounces chopped tomatoes |
5 ounces mozzarella cheese, cubed |
12 ounces pasta, cooked and drained, to serve |
Directions:
1. Heat the oil in a frying pan. Add the peppers and onion. 2. Fry for 10-15 mins, until the onion is tender and the peppers are soft. 3. Add the garlic and chopped tomatoes. Simmer for 10 minutes. 4. Stir in the cubed mozzarella and season well with salt and pepper. 5. Serve with the hot pasta. |
