Pepper And Garlic Potatoes

A great side dish that is sure to keep the vampires away! Tasty and easy! Simple yet delicious!
Ingredients:
12 to 15 small white or red (new) potatoes, (do not remove skin but do scrub clean) and halved
1 stick plus 3 tablespoons butter
6 to 8 cloves garlic, minced
1 bunch green onions, sliced
1 tablespoon cracked pepper
salt to taste
2 teaspoons fresh parsley or parsley flakes
1 tablespoon olive oil
Directions:
1. Boil potatoes until tender(about 10 to 12 minutes)
2. Drain and set aside
3. In skillet, saute garlic and green onions in butter and oil for 2 to 3 minutes over med. low heat
4. Place potatoes in serving bowl
5. Toss in butter garlic sauce and parsley
6. Season with salt and cracked pepper
7. serve warm or can be refrigerated and used for potato salad
