Peppers add âzingâ to this wonderful egg dish, chock-full of herby seasoning. Itâs simple to put together for breakfast or brunch. âKristin Cummins, Mogadore, OH Ingredients:
12 eggs |
2 tablespoons minced chives |
2 tablespoons minced fresh parsley |
2 teaspoons minced fresh basil or 1/2 teaspoon dried basil |
2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano |
1 teaspoon salt |
1/4 teaspoon pepper |
3 tablespoons olive oil |
1/2 cup sliced pickled peppers |
1/2 cup crumbled goat cheese |
Directions:
1. In a large bowl, whisk the eggs, herbs, salt and pepper. In a 10-in. ovenproof skillet, heat oil over medium heat. Add egg mixture. Cover and cook for 4-6 minutes or until nearly set. 2. Top frittata with peppers and cheese; broil 3-4 in. from the heat for 2-3 minutes or until eggs are completely set. Let stand for 5 minutes. Cut into wedges. Yield: 8 servings. |
