Got this recipe from a restaurant that we have bridal showers, baby showers, etc., at. Cheap, easy & quick Ingredients:
pepperoni |
2 to 3 cans whole canned potatoes |
1 red pepper chopped |
1 green pepper chopped |
1 onion chopped |
2 tbsp crushed tomatoes |
olive oil |
parmesan cheese |
salt & pepper |
Directions:
1. Preheat oven to 350 2. Cube pepperoni into 1/2 cubes 3. Chop red & green peppers & onion 4. Drain potatoes well 5. In a casserole pan: 6. Add drained potatoes, chopped red & green peppers, onion and toss 7. Season with salt and pepper 8. Add 1-2 tbsp crushed tomatoes 9. Add (drizzle) olive oil over top 10. Mix well 11. Top with Parmesan cheese 12. Bake at 35o for about 30 minutes |
