This a non-chocolate fudge. It has a nice taste of brown sugar and walnuts.. I have made a few changes to the orginal. the recipe is from a pamphet called simple, easy candy recipes. I have not tried this recipe but I think it's close to my original one that I can't find. Ingredients:
1 cup half-and-half |
2 tbsp. butter |
2 cups packed light brown sugar |
1 cup white sugar (superfine works best) |
1 tbsp. light corn syrup |
2 teasp. vanilla |
1 cup chopped walnuts |
Directions:
1. Butter side of a heavy medium sized saucepan 2. combine half-and-half, butter, corn syrup, brown sugar, and white sugar in the saucepan. 3. cook over medium heat, stirring constantly, until the sugar is dissolves and the mixture comes to a boil. 4. add candy thermometer to side of saucepan and continue to cook until mixture reaches soft-ball stage ( 238' F ) 5. pour into a large heat-proof mixer bowl 6. cool to lukewarm about 110' F 7. add vanilla and beat with a heavy-duty electric mixer until thick. 8. beat in the walnuts when candy loses its gloss. 9. spread into a well buttered 8-inch square pan. 10. score fudge into squares with a knife 11. refrigerate until firm. cut into squares.. |
