Penny's Parsnip and Carrot Soup

This is so simple, and just delicious; one of those reasons to own an immersion blender.
Ingredients:
5 large parsnips
4 medium carrots
6 cups chicken broth
1 teaspoon turmeric (or more)
salt and pepper (lots of the latter!)
Directions:
1. Slice parsnips and carrots thinly.
2. Cook in broth until tender.
3. Add turmeric, salt and pepper to taste and puree.
