Penny's Parsnip and Carrot Soup |

This is so simple, and just delicious; one of those reasons to own an immersion blender. Ingredients:
5 large parsnips |
4 medium carrots |
6 cups chicken broth |
1 teaspoon turmeric (or more) |
salt and pepper (lots of the latter!) |
Directions:
1. Slice parsnips and carrots thinly. 2. Cook in broth until tender. 3. Add turmeric, salt and pepper to taste and puree. |
