Pennsylvania Pot Roast

Traditional beef dish 1 serving = 3 oz. roast, 1/3 c. sauce
Ingredients:
24 oz. beef, loin, bottom sirloin butt, tri-tip roast
3/4 c. beef broth
1 c. minced onion
1/2 c. tomatoes, crushed, canned
1/4 c. diced carrot
1/4 c. diced celery
1 tbsp. dried parsley
1/4 tsp. thyme
Directions:
1. Place a large saucepan coated with cooking spray over medium high heat until hot. Add roast, browning all sides. Add broth and remaining ingredients to pan, bring to a boil.
2. Cover, reduce heat, and simmer 3 hours or until tender.
3. Slice roast and place on a serving platter. Cook broth mixture, uncovered, for 10 min. Serve roast with sauce.
