Pennsylvania Dutch Sugar Cakes

More of a cookie than a cake.
Ingredients:
1 cup shortening
3 large eggs
1 tsp vanilla
4 cups flour
1 tsp baking soda
2 cups sugar
2 tsp baking powder
1 cup buttermilk
Directions:
1. Beat shortening, eggs and vanilla. Combine flour, baking soda, sugar and baking powder. Add to shortening mixture. Slowly stir in buttermilk.
2. Drop by spoonfuls onto a greased cookie sheet.
3. Bake at 425 for 10 minutes.
4. These cookies are great plain with sugar sprinkled on top before baking. My nieces like them iced with Chocolate or Strawberry frosting (I use Betty Crocker). Mom likes them with the Coconut Pecan frosting for German Chocolate cake and Dad like them with a Lemon Curd buttercream frosting I make. Be creative!!
