Penne With Spinach And Pine Nuts |

Simple and so good! Perfect with some fabulous bread and a glass of wine. Ingredients:
1 clove garlic, minced |
1 c. sliced mushrooms |
1/2 c. sliced green onion |
1/2 c. pine nuts |
1/4 c. parmegiano-reggiano |
2 c. fresh baby spinach leaves, torn |
2 t. extra virgin olive oil |
2-3 sundried tomatoes, rehydrated & sliced |
8 oz. penne, uncooked |
Directions:
1. Cook pasta to al dente. 2. Heat oil and add mushrooms, garlic, onion and pine nuts. 3. Sauté for 2-3 minutes to lightly toast nuts. 4. Add spinach and tomatoes, continue to sauté, stirring for 3-4 minutes. 5. Toss drained pasta with the vegetables. 6. Sprinkle with parmesan cheese. |
