Penne with Sausage and Kale |

Whole wheat pasta with turkey italian sausage, kale and chickpeas. Ingredients:
1 lb turkey mild italian sausage |
14 1/2 oz chickpeas, drained |
4 cups kale, chopped, stems removed |
3/4 cup chicken broth |
2 tbs lemon juice |
1/4 tsp crushed red pepper |
1 tbs olive oil |
1 medium onion, small dice |
16 oz whole wheat penne, cooked per package directions |
1/2 tsp salt |
1/2 tsp pepper |
Directions:
1. Brown and crumble sausage in oil in large heavy skillet over medium high heat-drain any fat-put back into pan 2. Add onion, chickpeas, & red pepper-let cook until onion is barely soft 3. Deglaze pan with chicken broth-bring up to simmer 4. Add kale gradually, working it in until it is all wilted in 5. Add salt, pepper and lemon juice 6. Let cook for about 10-15 minutes 7. Add hot cooked pasta to pan-turn off heat 8. Let pasta absorb some of liquid 9. Serve immediately |
