Penne With Prosciutto in Butter Sauce |

1 lb penne |
1/4 lb prosciutto, sliced |
1/2 cup butter |
1/2 sweet white onion, minced |
1 garlic clove, minced |
1/2 cup chicken stock |
1 lemon, zest of |
1/2 teaspoon nutmeg |
1/2 cup flat-leaf italian parsley, coarsely chopped |
1 cup parmesan cheese, grated |
salt and pepper |
Directions:
1. Bring large pot of water to a boil. Add penne and cook until al dente. 2. While pasta is cooking, trim fat off of proscuitto and slice into wide strips. 3. In a large frying pan, melt the butter. 4. Add onion and garlic and sauté until onion is soft, about 4 minutes. 5. Add chicken stock and simmer for 1 minute. 6. Drain pasta and place into a warmed, large bowl. 7. Add proscuitto, lemon zest, nutmeg, parley and salt and pepper to taste. 8. Pour in stock mixture add toss well. 9. Add parmesan cheese and mix well. 10. Serve immediately. |
