Penne with Eggplant, Thyme, Cheese Ingredients:
8 oz penne pasta |
2 tablespoons olive oil |
1 lb eggplant |
2 tablespoons sun-dried tomatoes |
1/4 teaspoon crushed red pepper |
1 teaspoon garlic powder |
1/4 teaspoon salt |
1/3 cup white wine |
1 teaspoon thyme leaves |
4 tablespoons of parmasan cheese |
Directions:
1. Cook pasta according to directions, drain. 2. Saute olive oil, eggplant, tomatoes, crushed red pepper until brown about 10 mins. 3. Stir in garlic and salt for additional 5 mins. 4. Add wine and thyme, reduce heat and cook for about 10 mins. 5. Add pasta to skillet with eggplant mix and cook 2 mins. 6. Spoon into pasta bowls and add cheese. |
