Penne With Blue Cheese, Roasted Red Onions and Walnuts |

This combination is wonderful - at least we think so. Came from a cookbook called pure simple cooking . P.S. Original recipe called for Gorgonzola Ingredients:
3 large red onions, halved |
6 tablespoons olive oil |
2 tablespoons balsamic vinegar |
salt and pepper |
12 ounces penne |
4 ounces gorgonzola or 4 ounces blue cheese, crumbled |
3 tablespoons coarsely chopped fresh flat leaf parsley |
1/2 cup walnut pieces, toasted |
5 tablespoons olive oil |
Directions:
1. Preheat oven to 375 degrees. 2. Cut each onion half into crescent shaped slices, about 1/4 thick . Toss in roasting pan with the Olive oil, vinegar, salt and pepper. 3. Roast for 30 - 35 minutes shaking pan from time to time. 4. The onions should be tender and slightly charred. 5. Cook pasta, drain, and return to saucepan. 6. Add onions, cheese, parsley, walnuts and Olive oil (extra virgin). 7. Stir to serve. |
