Penne Salad With Fresh Mozzarella |

Italian pasta salad pairs fresh mozzarella with spicy Kalamata olives and sweet grape tomatoes. Ingredients:
8 oz good quality penne pasta |
6 oz fresh mozzarella balls, packed in water |
2/3 cup pitted kalamata olives |
1/2 9 oz package grape tomatoes |
2 t fresh italian flat leaved parsley |
1/4 c extra virgin olive oil |
2 cloves garlic, minced |
1 t white balsamic vinegar |
1/2 tsp dried basil |
sea salt to taste |
Directions:
1. Put garlic & olive oil in microwave safe bowl. Heat until garlic is soft, about 90 seconds. Let sit. 2. Cook penne according to package directions. Drain and blanch in cold water. 3. Cut mozzarella balls in half. 4. In large bowl combine pasta, mozzarella, olives, tomatoes, and Italian parsley. 5. Stir vinegar & basil into garlic olive oil. 6. Pour over remaining ingredients and mix well to coat. 7. Refrigerate at least 2 hours. |
