Penne Pasta With Shrimp And Spicy Tomato Sauce |

This dish is incredible. I serve it with a dinner salad and garlic rolls and I gain brownie points every time I serve it. Hope you enjoy it as much as we do. Ingredients:
1/4 cup olive oil |
1 tablespoon lemon juice |
1-1/2 teaspoons paprika |
1-1/2 teaspoons ground cumin |
1/4 teaspoon ground ginger |
1/4 teaspoon oregano |
1/2 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
3/4 cup canned tomatoes in thick puree |
1/3 cup chopped cilantro |
1 pound penne pasta |
1 pound medium shrimp peeled |
grated parmigiano cheese |
Directions:
1. In a large glass bowl whisk together olive oil and lemon juice with paprika, cumin, ginger, oregano, salt and pepper. 2. Stir in crushed tomatoes and cilantro. 3. In a large pot of boiling water cook pasta for 12 minutes. 4. Add shrimp and cook until 3 minutes longer. 5. Drain and toss with tomato sauce. 6. Serve with cheese. |
