low sodium pasta and sauce recipe from the Microwaving Light and Healthy cookbook, gets you an A! Ingredients:

4 medium tomatoes, chopped |
6 oz. tomato paste |
1 tsp. italian seasoning |
1/2 tsp. sugar |
1/8 tsp. salt |
1/8 tsp. pepper |
pasta |
7 oz. penne pasta |
topping |
2/3 cup part-skim mozzarella cheese |
Directions:
1. Prepare penne as directed on package. Rinse, drain, and set aside. 2. In 2-quart casserole, combine all sauce ingredients. Cover. Microwave at High for 10 minutes, stirring once. Taste and add any other spices you'd like for taste. (I'd suggest a little garlic powder and basil.) Reduce power to 70%. Microwave for 8-10 minutes longer, or until flavors are blended, stirring once. Recover and set aside. 3. Combine penne and sauce. Mix well. Top with mozzarella cheese. Reduce power to 70% again and microwave for 1-3 minutes or until the cheese is melted. Let stand for 1 minute and serve. |
