Ingredients:
2 tablespoon(s) butter
3/4 tablespoon(s) dried red pepper flakes
3/4 cup(s) freshley grated pecorino romano cheese
1/2 cup(s) freshly grated parmesan
2 piece(s) garlc cloves, minced
35 ounce(s) italian plum tomatoes can
2 tablespoon(s) olive oil
1 package(s) pancetta, minced
1 pound(s) penne pasta
1 teaspoon(s) salt
Directions:
1. heat oil in heavy large skillet over medium low heat. Add pancetta and garlic and cook until fat is rendered and garlic is golden brown. Stirring frequently. In about 10 minutes add tomatoes. Cook about 30 minutes. Cook pasta in large pot of boiling salted water. Drain pasta and add to sauce. Toss with butter and cheese.
2. Salt and pepper to taste.
