Ingredients:
1 box(es) (14.5) penne |
1/3 cup(s) chopped shallots |
4 ounce(s) fat-free cream cheese, broken into chunks |
1/2 cup(s) frozen peas |
2 cup(s) marinara sauce |
1 1/2 teaspoon(s) olive oil |
1/4 cup(s) vodka |
Directions:
1. ) Cook pasta in large pot of salted boiling water as box directs. Add peas just before draining pasta. 2. ) Meanwhile, heat olive oil in a medium saucepan. Add shallots; cover and cook over medium heat 3 minutes. 3. ) Add vodka; boil until evaporated, about 2 minutes. Stir in marinara sauce; simmer 2 minutes to blend flavors. 4. ) Stir in cream cheese and cook, stirring until melted. 5. ) Drain pasta and peas. Return to pot; add sauce and gently toss to combine. |
