This is a recipe my boyfriend's Italian mother shared with me. It's quick, easy, delicious, & great to freeze ahead in small containers for days when you don't have a lot of time. Ingredients:
3 tablespoons extra virgin olive oil |
1/2 lb sweet italian sausage (or hot, your preference) |
4 garlic cloves, sliced |
1/2 teaspoon red pepper flakes (optional) |
1 cup heavy cream |
1/2 cup vodka |
1 (28 ounce) can whole tomatoes, blended & seeds removed |
1 leaf fresh basil |
1 lb penne pasta |
Directions:
1. -Remove sausage meat from casing, brown in a skillet with garlic and spices in olive oil. Do not drain. Add tomato sauce, fresh basil, & vodka. Bring to a steady boil, then cook for 15 minutes. Taste periodically to ensure alcoholic content is evaporating. After sauce is finished, add cream, stir & heat thoroughly. Serve over 1 pound of penne pasta. |
