I got this from my daughter. I've tried many recipes for this dish, but I think this is the best version. You could serve this as a first course which will serve 6-8, or as a main course for four. Ingredients:
1 medium-large onion, chopped fine |
1 teaspoon butter |
olive oil (enough to coat bottom of pan) |
1/4 lb prosciutto, chopped (about 7-8 slices) |
28 ounces whole tomatoes, hand squeezed (i like san marzano) |
1/2 pint heavy cream |
2 ounces vodka (1 shot glass) |
salt & pepper |
1/4 cup water |
1 1/2 lbs penne pasta |
grated parmesan cheese |
Directions:
1. Chop onion finely and saute in butter and olive oil. When onion is soft (not golden) add prosciutto and cook together. Be careful not to burn. Add tomatoes and water and season with salt & pepper. After cooking 1 hour on very low heat, add vodka and continue to cook another 15 minutes. Meanwhile, cook penne al dente. Add cream last and cook to a slow boil. 2. Toss with penne and cheese. Enjoy! |
