Penne a La Vodka (Low Fat)

5 Weight Watchers points per cup.
Ingredients:
2 teaspoons olive oil
2 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1/2 cup evaporated skim milk
1 (16 ounce) box penne pasta
1 onion, chopped
1 (28 ounce) can diced tomatoes with juice
1/2 cup minced parsley
2 tablespoons vodka
Directions:
1. In large nonstick saucepan, heat oil.
2. Add onion and garlic. Cook, stirring as needed, until softened (about five minutes.).
3. Stir in red pepper flakes and tomatoes. Bring to a boil.
4. Reduce heat and simmer, uncovered, until the sauce is slightly thickened (about 10 minutes.).
5. During this, you also want to start cooking the pasta.
6. Stir in parsley, milk, and vodka (to the sauce.) Cook until heated through, about 1 minute.
7. Place cooked penne in large serving bowl, add tomato mixture and toss to coat.
