Pendog's Pineapple Shrimp Packets

This slammin' BBQ recipe was given to me by an internet friend whom I only know as Pendog. It's sweet and savory, and will be like a party in your mouth. It's a bit much to prepare, especially if you go all out like I did, but it doesn't take that long to cook. Read more . This impressed the crap out of my friends and I'd recommend it for anyone going to a potluck or BBQ and would like to contribute something delicious and out of the ordinary.
Ingredients:
6 canned pineapple slices, or 1 1/2 jars of pineapple chunks
1-1/2 pounds uncooked medium shrimp, peeled and deveined
1/3 cup chopped sweet red pepper
1/3 cup packed brown sugar
3 tablespoons butter, cubed
1 tablespoon seafood seasoning
Directions:
1. Original recipe: For each foil packet, place a pineapple slice on a double thickness of heavy duty foil (about 12 in, square). Top with shrimp and red pepper. Combine the brown sugar and seafood seasoning; sprinkle over shrimp. Dot with butter. Fold foil all around the mixture and seal tightly.
2. Grill, covered, over medium heat for ten to fifteen minutes or until shrimp turn pink. Open foil carefully to allow steam to escape.
3. My Bastardization: I measured everything by eye and got 10 servings. Used pineapple chunks from a plastic jar because I didn't want the metallic, acidic taste to interfere with the flavor of this dish.
4. I didn't have ready-made seafood seasoning, so I used chili and garlic powder, old bay seasoning, parsley, dill weed, lemon zest and freshly ground black pepper. You don't have to go to these lengths, but I will say the chili, garlic and old bay gave it a powerful, zesty kick you will love.
