This is a heavenly pie.....PECANS in meringue, with a surprise ingredient! SO EASY...top with whipped cream, lemon sauce, praline sauce, ice cream, strawberries, or you name it!! Ingredients:
3 egg whites |
1 cup granulated sugar |
1 teaspoon baking powder |
1 teaspoon vanilla |
1 cup pecans, chopped |
24 ritz crackers crushed |
Directions:
1. Beat egg whites until frothy 2. Mix sugar with baking powder 3. Add gradually to egg whites while beating 4. Continue to beat until high peaks form 5. Add vanilla, just until mixed 6. FOLD in crushed crackers and pecans 7. Pour into a 9 inch pie plate (makes its own crust) 8. Bake 30 minutes in a 350 degree oven 9. TOP with whipped cream, or your choice of topping 10. DELICIOUS!! |
