Ingredients:
1 1/3 cups chicken broth |
2 teaspoons butter |
1/4 teaspoon salt |
1 (2.75-oz.) package quick-cooking wild rice |
4 green onions, thinly sliced |
1/2 cup golden raisins |
1/3 cup chopped pecans, toasted |
1 teaspoon grated orange rind |
1/3 cup fresh orange juice |
1/4 cup chopped fresh parsley |
1 tablespoon olive oil |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Bring first 3 ingredients to a boil in a medium saucepan. Add rice; cover, reduce heat, and simmer 5 minutes or until rice is tender. Drain off excess liquid. Fluff with a fork. Add green onions and remaining ingredients; toss gently to combine. |
