Almost as cute as they are delicious. From Carol O'Donnell Ingredients:
crust |
3 oz. cream cheese |
1 stick butter(1/2 c) |
1 c flour |
1/8 tsp salt |
filling |
3/4 c lt brown sugar |
1 egg |
1/8 tsp salt |
1/4 tsp cinnamon |
1 tbs. butter,softened |
1/2 c chopped pecans |
1 tsp vanilla |
Directions:
1. Preheat oven to 350 degrees. Spray a mini-muffin pan well with vegetable oil spray'including the top. In a large mixing bowl,cream together the cream cheese and butter till light and fluffy.. Add the flour and salt,mix well. 2. Line the cups of a mini-muffin pan with crust dough,being sure to press the dough up the sides. you can either put a ballof doughinto each slot and work it into shapes up the side or roll out dough and cut a biscuit round and press it in-either way works. 3. In seperate bowl,combine filling ingredients and mix well. Pour into the pastry-lined muffin cups and bake at 350 degrees for 20-25 mins until brown and almost firm. Let cool briefly before removing from the pan-they come out best when warm but not hot. |
