I love these - mini pecan pies. They look very elegant on the cookie trays and people devour them. Ingredients:
1 1/4 cups brown sugar |
1 cup pecans, chopped |
2 eggs, lightly beaten |
2 tablespoons margarine or 2 tablespoons butter |
2 teaspoons vanilla |
2 cups flour |
1 cup butter, softened |
2 (8 ounce) cream cheese, softened |
Directions:
1. Preheat oven to 350 degrees. 2. In medium bowl combine sugar, pecans, eggs, butter and vanilla. 3. Spoon 1 teaspoon of mixture into each prepared tart shell. 4. Bake 30 minutes or until golden brown. 5. On a wire rack, cool 10 minutes; remove from pans and cool completely. 6. Crust: 7. In large bowl combine flour, margarine and cream cheese to form soft dough. 8. Shape into 3/4 inch balls. 9. Press into ungreased mini muffin pans to form tart shells. |
