From Southern Living's The Southern Living Cookbook. Prep time does not include hard-cooking the eggs. Ingredients:
6 hard-cooked eggs |
3 tablespoons mayonnaise |
1/4 cup chopped pecans |
1 teaspoon grated onion |
1 teaspoon vinegar |
1/4-1/2 teaspoon dry mustard |
1/8 teaspoon salt |
1/2 teaspoon minced fresh parsley |
fresh parsley sprig (optional) |
Directions:
1. Slice eggs in half lengthwise and remove yolks. Mash yolks with a fork. 2. Add next 7 ingredients. 3. Spoon mixture into reserved egg whites. Garnish with parsley sprigs if desired. |
