I came up with these by accident when my food processor decided to say Kaput when I was making carrot cake muffins... they're really yummy and easy to make and perfect on the go! Ingredients:
1 1/2 c. oil |
2 tsp. cinnamon |
1/2 tsp nutmeg |
1/4 tsp ginger |
4 eggs |
1 1/2 tsp orange extract |
1 1/2 tsp. baking soda |
2 c. sugar |
2 c. flour |
1 8 oz bag chopped pecans |
Directions:
1. Preheat oven to 350 degrees. 2. Beat eggs until fluffy. 3. Add oil and extract and beat well. 4. Sift dry ingredients together and add to egg mixture. 5. Add nuts and mix well. 6. Spoon into lightly greased muffin pan and bake at 350 degrees for 30 minutes or until toothpick inserted in center comes out clean. |
