Ingredients:
1/2 cup butter, softened |
3/4 cup brown sugar |
1 egg, lightly beaten |
1/2 cup molasses |
1 tablespoon grated orange rind |
2 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1 1/2 teaspoons ground ginger |
1/2 teaspoon ground nutmeg |
1/4 teaspoon ground cloves |
1 cup chopped pecans |
3/4 cup unsweetened orange juice |
Directions:
1. Beat butter in a large bowl at medium speed of an electric mixer until creamy; gradually add brown sugar, beating well. Add egg, and beat well. Stir in molasses and orange rind. 2. Combine flour and next 6 ingredients; add to creamed mixture alternately with orange juice, beginning and ending with flour mixture. Mix after each addition. 3. Pour batter into a greased and floured 9- x 5- x 3-inch loafpan. Bake at 350° for 55 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 5 minutes; remove from pan, and let cool completely on a wire rack. |
