These little cookies puff up during baking like little pastries. The original recipe uses whole dates but I prefer pecans. Ingredients:
1 c butter,softened |
1 pkg. (8oz) cream cheese,softened |
2 c flour |
1/4 tsp salt |
2 c pecan halves |
1 c confectioners sugar |
Directions:
1. In large bowl,beat butter and cream cheese till light and fluffy. Combine flour and salt;gradually add to butter mixture and mix well. Cover and refrigerate for 1-2 hours or till easy to handle. 2. Divide dough in half. On a lightly floured surface,roll out one portion into an 1 8x8 rectangle. Cut widthwise into 6 3 sections;cut each section into 3 x1 strips. Roll each strip around a pecan half;place 1 apart on ungreased baking sheets. Repeat. 3. Bake at 350 degrees for 12-15 mins or till bottoms are lightly browned. Remove to wire racks to cool completely. Roll in confectioners sugar. Store in airtight container at room temperature or freeze for up to 3 months. |
