PECAN RICE CASSEROLE SUPREME This recipe came from a neighbor who served it at one of her dinner parties about three years ago. Everybody went crazy over this recipe. Needless to say I have made it on numerous occasions and it is really tasty. Read more . Be prepared to hand out the recipe. Ingredients:
1 cup pecans chopped fine |
3/4 cup raw brown rice |
1-1/4 cup grated ricotta cheese |
1 cup mushrooms chopped small |
1 cup wheat germ |
1 large white onion minced |
2 cloves garlic minced |
1/8 teaspoon cayenne |
1/4 teaspoon salt |
2 eggs beaten |
mushroom gravy |
1 teaspoon olive oil |
1 cup mushrooms thinly sliced |
1/2 cup whole wheat flour |
1-3/4 cup water |
1 teaspoon soy sauce |
2 teaspoons vegetable broth powder |
1 teaspoon salt |
1 teaspoon pepper |
Directions:
1. Combine pecans, rice, cheese, mushrooms, wheat germ, onion, garlic, cayenne and salt together and mix thoroughly. 2. Add eggs and mix again. 3. Pour into a well oiled baking pan. 4. Bake at 350 for 50 minutes. 5. Let sit 5 minutes before cutting and serving with hot mushroom gravy. 6. For gravy heat butter and sauté mushrooms. 7. Sprinkle on flour and brown by stirring over medium heat. 8. Add remaining ingredients and bring to a low boil. 9. Turn heat to low. 10. Stir, cover and let simmer for 15 minutes. |
