Pecan Pie Mini Muffins

Cute little pecan pie muffins. They freeze well. Great for gifts.
Ingredients:
1 cup packed brown sugar
1/2 cup self rising flour
1 cup chopped pecans
2/3 cup melted butter
2 eggs, beaten
Directions:
1. In bowl, combine the sugar, flour, and pecans; set aside.
2. In separate bowl, combine the butter and eggs. Stir in the flour mixture.
3. Fill greased and floured mini muffin tins about 2/3 full.
4. Bake at 350°F for 20 to 25 minutes, or until they test done with a toothpick.
5. Remove from tins immediately, and let cool on wire rack.
6. These also freeze well.
