Haven't tried this yet, but I'm so intrigued by it, that I'm sure it won't be long before I'm putting it together. Says it yields 40 brownies, but I have my serious doubts! Courtesy of Southern Living... Ingredients:
1 (2-pound) frozen pecan pie, thawed completely |
1/2 cup butter |
1 -3/4 cups (11.5 oz package) semi-sweet chocolate chunks |
1 cup sugar |
2 large eggs |
1 cup milk |
1-1/2 cups ap flour |
1 teaspoon baking powder |
Directions:
1. Cut pecan pie into cubes, set aside. 2. Microwave 1/2 cup butter and chocolate chunks in a glass bowl at High 1 min. 3. Stir and microwave 1 more minute. 4. Stir until mixture is smooth. 5. Beat chocolate mixture, sugar, eggs, milk, and half of pie cubes at low speed with a heavy-duty stand mixer until blended. 6. Add flour and baking powder, stirring with a wooden spoon until blended. 7. Stir remaining half of pie cubes into batter. Batter will be thick. 8. Spoon batter into a 13x9 pan coated with cooking spray. 9. Bake at 350 degrees for 50 minutes. 10. Cool brownies completely on a wire rack. 11. Cut into triangles or squares. 12. The Southern Living kitchen used a Mrs. Edwards Pecan Pie for testing purposes. |
