These are delicious and a blue ribbon winner at our County Fair! Ingredients:
2 cups all-purpose flour |
1/2 cup sugar |
1/8 teaspoon salt |
3/4 cup butter, cut up |
1 cup firmly packed brown sugar |
1 cup light corn syrup |
1/2 cup butter |
4 eggs, lightly beaten |
2 1/2 cups finely chopped pecans |
1 teaspoon vanilla extract |
Directions:
1. Preheat oven to 350 degrees. 2. Grease a 13 x 9 pan. 3. Crust:. 4. Combine flour, sugar and salt in a large bowl. 5. Cut in 3/4 butter thoroughly with a pastry blender (or fork) until mixture resembles very fine crumbs. 6. Press mixture evenly into a greased pan, using a piece of plastic wrap to press crumb mixture firmly in pan. 7. Bake at 350 degrees for 17 to 20 minutes or until lightly browned. 8. Filling:. 9. Combine brown sugar, corn syrup, and 1/2 cup butter in a saucepan. 10. Bring to a boil over medium heat, stirring gently. 11. Remove from heat. 12. Stir one-fourth of hot mixture into beaten eggs (to temper eggs); add to remaining hot mixture. 13. Stir in pecans and vanilla. 14. Pour filling over baked crust. 15. Bake at 350 degrees for 30-35 minutes or until set. 16. Cool completely in pan on a wire rack. 17. Cut into desired size bars. |
